Knife blades are usually made from high carbon stainless steel that is corrosion and rust resistant. The blade is tapered for easier sharpening. Forged blades are higher quality than stamped ones.  Forged blades are made from a heated piece of metal that’s worked into a blade. Stamped blades are cut from metal sheets and pressed into a blade. Fine edged knives are the classic kind. They are preferred by professional chefs due to their precise cutting, although they need regular sharpening. Some knife brands don’t need sharpening. These are convenient for everyday family cooking, are more affordable in price but they may not cut as well as fine edge knives.

Kitchen knives can be purchased individually or as a set. If the set is too expensive then start with a two or three and slowly add to your collection with individual pieces.

Factors to consider when buying a kitchen knife set

  1. Knives bought as a set are often less expensive than knives bought one by one.
  2. Consider purchasing a knife’s storing block which is a secure way to store knives.
  3. What are the main tasks you are going to use the knives for?
  4. When purchasing individually, start with commonly used ones such as the utility, pairing and slicing knives.
  5. Buying from a shop may be cheaper than direct from the manufacturer.
  6. Look quality indicators such as stainless steel, forged blades and fine edged.
  7. If you cook a lot of Asian foods consider buying a set of Asian knives.
  8. Knife performance is more important that brand uniformity. So buying the same brand isn’t necessary.

You shouldn’t comprise on knife quality because of the price. High quality kitchen knife sets are also higher priced but they will be part of your kitchen all through your life.
